cogumelo MushroomsA small, diversified farm in Natural Bridge with a focus on fungi, operated by Liam Carney. They grow specialty mushrooms such a shiitake, oyster, lion's mane, chestnut, wine cap, and more while practicing a variety of systems ranging from log-grown agroforestry production to controlled environment fruiting chambers. Mushroom cultures are maintained in an on-farm lab, and locally sourced products are used as substrate. Ready-to-fruit blocks, spawn, and inoculated logs are also available to the public. Liam is certified in wild mushroom ID and serves as a community mushroom educator. Additionally, they offer wild mushrooms including chanterelles, chicken-of-the-woods, morels, reishi, and maitake, along with other forest products such as ramps and chaga. Educational walks and workshops are offered throughout the year.
Beyond mushrooms, they offer whole and parted pasture-raised chicken and turkey, heirloom tomatoes, specialty cherry tomatoes, sweet potatoes, ginger, and several other seasonal products, including cut flower bouquets. They use permanent bed, no-till gardening systems without chemical fertilizers or pesticides, pressure treated wood, or plastic mulch. More recently, they have been working on award winning nano and micro lots.
In 2023, Tug Hill Artisan Roasters opened a bakehouse in Lowville, NY in the old County Jail. Then in 2025, they opened "Saint Drogo's Coffee and Bakehouse", a cafe in the old Sheriff's residence with a covered porch and stone patio.
